There’s nothing like a crisp delicious salad topped with fresh sliced strawberries to accompany any barbecue and bring the tastes of summer into your kitchen.
½ cup olive oil (125ml)
3 tbsp red wine vinegar (45ml)
1 tbsp fresh lemon juice (15ml)
2 tsp sugar (10ml)
½ tsp salt (2ml)
½ tsp dry mustard (2ml)
1 garlic glove
2 tbsp butter (30ml)
½ cup sunflower seeds, shelled (125ml)
½ cup slivered almonds (125ml)
4 cups mixed spring greens
2 green onions, finely chopped
1 cup fresh strawberries, sliced
1 ripe avocado, peeled and sliced
Combine dressing ingredients in a jar, shake to blend. Heat butter in frying pan and sauté sunflower seeds and almonds until golden brown. Remove from pan and set aside to cool. Prepare remaining ingredients. Add cooled seeds and almonds. Toss with dressing just before serving. Serves 8 to 10.
